Simple Salad with Maple Dijon Dressing for Foodie Friday

Everyone enjoys a good Summer Salad, especially with a fantastic dressing!  I love this simple salad & this sweet & savory maple dijon dressing.  While maple syrup isn’t raw, it is a wholesome local product that adds so much flavor.  If you aren’t into it, just sub your favorite sweetener in like coconut nectar or raw agave.  This salad is sure to be a hit with the kids in your life too!

 

Summer Salad with Maple Dijon Dressing

1 head of lettuce

1 tomato, diced

1 cucumber, diced

1 radish, sliced

1 stalk celery, sliced

1 carrot, shredded

1/2 beet, shredded

2 Tbs raisns

2 Tbs pecans

 

dressing:

1/4 cup olive oil

2 Tbs coconut aminos or nama shoyu (soy sauce) OR 1/2 tsp sea salt

2 Tbs maple syrup or other sweetener

2 tsp apple cider vinegar

1 tsp mustard powder

1 clove of garlic, minced

Combine all salad ingredients in a salad bowl.  Whisk dressing ingredients  & pour over salad & toss.  Eat up!  YUMMMMMM!
