It’s hot outside & the local veggies are rawmazing, so now is the perfect time for a platter of simple rawpetizers the whole family can munch on!
Sunflower Dill Rawpetizers- recipe serves 6
nut cheeze:
1 cup of sunflower seeds, soaked 8 hours (or not, if you are in a pinch)
1/4 cup fresh dill or basil
3 tablespoons yellow onion
1 tablespoon of chia seeds
1 tablespoon nutritional yeast
3/4 – 1 cup water
1/2 tsp sea salt or to taste
2 tsp apple cider vinegar – optional
add-ons:
1 zucchini or cucumber sliced, 1/8 inch thick
2 tomatoes, sliced 1/8 inch thick & cut in half
2 tablespoons fresh dill
1 tablespoon olive oil mixed with 1 minced clove of garlic-optional
1. Blend all nut cheeze ingredients together in a high speed blender or food processor until smooth and creamy.
2. Brush garlic olive oil mix onto each zucchini slice (optional) & place on a platter.
3. Top each zucchini slice with a spoonful of nut cheeze, a tomato slice, another dollop of nut cheeze & a little fresh dill & eat up!
